Ingredients

- 1/2 cup natural bran
- 1/2 cup prune juice
- 1/2 cup skim milk
- 1/4 cup packed brown sugar
- 2 egg whites, lightly beaten
- 1 cup flour
- 1/2 cup whole wheat flour
- 2 teaspoons baking powder
- 1 teaspoon nutmeg
- 1 teaspoon cinnamon
- 1/2 teaspoon salt
- 1/4 cup unsweetened applesauce
- 1 cup seedless raisin
- 1/2 cup chopped walnuts
Recipe
- 1 mix bran, prune juice, skim milk and brown sugar.
- 2 set aside for ten minutes.
- 3 stir in beaten eggs, flours, baking powder, nutmet, cinnamon and salt.
- 4 blend thoroughly.
- 5 stir in apple sauce raisins and walnuts.
- 6 spoon equally divided into greased muffin tins.
- 7 bake in 425 degree oven for 15-20 minutes until lightly brown and springy to the touch.
