Low Fat Prune And Fruit Muffins

Total Time: 35 mins Preparation Time: 20 mins Cook Time: 15 mins

Ingredients

  • Servings: 12
  • 1/2 cup natural bran
  • 1/2 cup prune juice
  • 1/2 cup skim milk
  • 1/4 cup packed brown sugar
  • 2 egg whites, lightly beaten
  • 1 cup flour
  • 1/2 cup whole wheat flour
  • 2 teaspoons baking powder
  • 1 teaspoon nutmeg
  • 1 teaspoon cinnamon
  • 1/2 teaspoon salt
  • 1/4 cup unsweetened applesauce
  • 1 cup seedless raisin
  • 1/2 cup chopped walnuts

Recipe

  • 1 mix bran, prune juice, skim milk and brown sugar.
  • 2 set aside for ten minutes.
  • 3 stir in beaten eggs, flours, baking powder, nutmet, cinnamon and salt.
  • 4 blend thoroughly.
  • 5 stir in apple sauce raisins and walnuts.
  • 6 spoon equally divided into greased muffin tins.
  • 7 bake in 425 degree oven for 15-20 minutes until lightly brown and springy to the touch.
