Low Fat Quiche With Rice Crust

Total Time: 1 hr 10 mins Preparation Time: 10 mins Cook Time: 1 hr

Ingredients

  • 1 1/2 cups cooked brown rice
  • 1 egg , slightly beaten
  • 2 eggs
  • 5 egg whites
  • 8 ounces cooked chicken breasts, diced
  • 2 cups vegetables, chopped small (ie, onion, pepper, broccoli)
  • 1 1/2 cups skim milk
  • 100 g goat cheese

Recipe

  • 1 preheat the oven to 350°f/180°c.
  • 2 mix the rice and slightly beaten egg to make the crust. spread in a large pie pan, or small rectangular pan. bake for 5 minutes.
  • 3 beat the eggs and remaining 5 egg whites. add the remaining ingredients and mix.
  • 4 pour the crust and bake for 40-50 minutes, until set.
