Low Fat Quiche With Rice Crust

Ingredients
- 1 1/2 cups cooked brown rice
- 1 egg , slightly beaten
- 2 eggs
- 5 egg whites
- 8 ounces cooked chicken breasts, diced
- 2 cups vegetables, chopped small (ie, onion, pepper, broccoli)
- 1 1/2 cups skim milk
- 100 g goat cheese
Recipe
- 1 preheat the oven to 350°f/180°c.
- 2 mix the rice and slightly beaten egg to make the crust. spread in a large pie pan, or small rectangular pan. bake for 5 minutes.
- 3 beat the eggs and remaining 5 egg whites. add the remaining ingredients and mix.
- 4 pour the crust and bake for 40-50 minutes, until set.
