Low Fat Soft, Chewy Spice Cookies

Ingredients
- 1 cup packed brown sugar
- 3/4 cup unsweetened applesauce
- 1/4 cup molasses
- 1/4 cup egg substitute
- 2 1/4 cups all-purpose flour
- 2 teaspoons baking soda
- 1 teaspoon ground ginger
- 1 teaspoon ground cinnamon
- 1/2 teaspoon ground cloves
- extra sugar (for rolling) (optional)
Recipe
- 1 in a medium mixing bowl, mix brown sugar, applesauce, molasses, and the egg substitute.
- 2 stir well to combine.
- 3 in a small bowl, combine flour, baking soda, ginger, cinnamon, and cloves.
- 4 mix well.
- 5 add spice/flour mixture to wet mixture.
- 6 on a baking sheet lightly coated with nonstick cooking spray, drop batter by teaspoonfuls.
- 7 leave about 2 inches between each cookie; they do spread a little.
- 8 if desired, sprinkle with extra sugar.
- 9 bake at 375° for about 8-10 minutes.
- 10 remove cookies from oven.
- 11 place them wire racks and allow them to cool.
- 12 enjoy!
