Low Fat Stevia Banana Bread

Total Time: 1 hr 15 mins Preparation Time: 15 mins Cook Time: 1 hr

Ingredients

  • 2 eggs
  • 2 bananas, over ripe
  • 1/3 cup skim milk
  • 2/3 cup unsweetened applesauce
  • 1 teaspoon vanilla
  • 2 1/4 cups whole wheat flour
  • 1/4 teaspoon salt
  • 1 teaspoon baking soda
  • 1 teaspoon stevia powder
  • 1 1/2 teaspoons cinnamon
  • walnuts (optional)

Recipe

  • 1 preheat oven to 350 and prepare a 9x5 loaf pan.
  • 2 beat eggs by hand. then add in the applesauce, vanilla, milk and bananas.
  • 3 in a seperate bowl combine dry ingredients - flour, stevia, baking soda, cinnamon and salt.
  • 4 add scoops of the dry ingredients into the egg mixture, mixing after each scoop until all combined.
  • 5 pour into loaf pan and bake 45 minutes to an hour.
