Low Sodium Beef Lentil Soup

Ingredients

  • Servings: 6
  • 1 quart water
  • 1 lb 96% lean ground beef
  • 46 ounces low-sodium tomato juice
  • 1 cup dry lentils
  • 2 cups green cabbage
  • 1 cup carrot
  • 1 cup celery rib
  • 1 cup yellow onion
  • 1/2 cup green pepper slices
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon ground thyme
  • 1 bay leaf

Recipe

  • 1 brown beef.
  • 2 shred cabbage, slice carrots, celery ribs, and chop yellow onions.
  • 3 add all ingredients into a large stock pot.
  • 4 bring to boil.
  • 5 reduce heat and simmer uncovered for 1 hr or until lentils and vegetables are tender.
  • 6 remove bay leaf before serving.
