Low Sodium Beef Lentil Soup

Ingredients

- 1 quart water
- 1 lb 96% lean ground beef
- 46 ounces low-sodium tomato juice
- 1 cup dry lentils
- 2 cups green cabbage
- 1 cup carrot
- 1 cup celery rib
- 1 cup yellow onion
- 1/2 cup green pepper slices
- 1/2 teaspoon black pepper
- 1/2 teaspoon ground thyme
- 1 bay leaf
Recipe
- 1 brown beef.
- 2 shred cabbage, slice carrots, celery ribs, and chop yellow onions.
- 3 add all ingredients into a large stock pot.
- 4 bring to boil.
- 5 reduce heat and simmer uncovered for 1 hr or until lentils and vegetables are tender.
- 6 remove bay leaf before serving.
