Maque Choux

Ingredients
- 4 slices thick-sliced bacon, diced
- 3/4 cup red bell pepper, diced
- 1/2 cup onion, diced
- 1/4 cup dry sherry
- 4 cups fresh corn kernels
- 1 cup heavy cream
- 1 teaspoon tabasco sauce
- salt
- pepper
- 1/2 cup scallion, thinly sliced
Recipe
- 1 saute bacon in large saute pan until crisp.
- 2 pour off all but one tbsp of drippings.
- 3 add bell pepper and onion and cook until soft.
- 4 deglaze with sherry until nearly evaporated.
- 5 stir in corn, cream, and tabasco and simmer until thickened.
- 6 season with salt and pepper and then stir in the scallions.
