Maque Choux

Total Time: 50 mins Preparation Time: 25 mins Cook Time: 25 mins

Ingredients

  • 4 slices thick-sliced bacon, diced
  • 3/4 cup red bell pepper, diced
  • 1/2 cup onion, diced
  • 1/4 cup dry sherry
  • 4 cups fresh corn kernels
  • 1 cup heavy cream
  • 1 teaspoon tabasco sauce
  • salt
  • pepper
  • 1/2 cup scallion, thinly sliced

Recipe

  • 1 saute bacon in large saute pan until crisp.
  • 2 pour off all but one tbsp of drippings.
  • 3 add bell pepper and onion and cook until soft.
  • 4 deglaze with sherry until nearly evaporated.
  • 5 stir in corn, cream, and tabasco and simmer until thickened.
  • 6 season with salt and pepper and then stir in the scallions.
