Low Calorie Boston Clam Chowder

Total Time: 35 mins Preparation Time: 15 mins Cook Time: 20 mins

Ingredients

  • Servings: 6
  • 1 (10 1/2 ounce) can clams, about 1 cup drained,save 1/2 cup liquid
  • 1/2 cup onion, chopped
  • 1/2 cup carrot, diced
  • 1/2 cup water
  • 1/4 teaspoon salt
  • 1/4 teaspoon pepper
  • 1/4 teaspoon thyme
  • 2 cups skim milk

Recipe

  • 1 set out a 3 quart saucepan.
  • 2 add 1/2 cup clam liquid, onions, carrots, water, salt, pepper& thyme.
  • 3 meanwhile cut the clams in half.
  • 4 when the veggies are tender put in the clams and gradually add milk.
  • 5 stirring all the while.
  • 6 simmer 5 minutes.
  • 7 garnish with chopped parsley.
