Low Calorie Tofu Oatmeal Chocolate Chip Cookies

Total Time: 24 mins Preparation Time: 15 mins Cook Time: 9 mins

Ingredients

  • 1 1/4 cups light margarine
  • 1/3 cup lite silken soft tofu, pureed
  • 30 (1/3 g) packets stevia truvia
  • 2 tablespoons molasses
  • 1 large egg
  • 2 teaspoons vanilla
  • 1 1/2 cups flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 teaspoon cinnamon
  • 1/2 teaspoon nutmeg
  • 3 cups rolled oats
  • 6 ounces nestle semi-sweet chocolate chips
  • 1/2 cup pecans, chopped

Recipe

  • 1 pre-heat oven: 350 degrees f.
  • 2 cream margarine with molassas and truvia until light and fluffy.
  • 3 beat in egg and vanilla.
  • 4 stir flour with baking soda, salt, nutmeg, cinnamon and add to creamed mixture - mix well.
  • 5 add pureed tofu to mixture - mix well.
  • 6 fold in oats, chips and nuts.
  • 7 place rounded tablespoonfuls ungreased cookie sheets.
  • 8 bake at 350 degrees for 9-10 minutes for soft and 11-12 minutes for firmer crisper cookies.
  • 9 best if transferred to cooling rack.
