Low Calorie Tofu Oatmeal Chocolate Chip Cookies

Ingredients
- 1 1/4 cups light margarine
- 1/3 cup lite silken soft tofu, pureed
- 30 (1/3 g) packets stevia truvia
- 2 tablespoons molasses
- 1 large egg
- 2 teaspoons vanilla
- 1 1/2 cups flour
- 1 teaspoon baking soda
- 1/2 teaspoon salt
- 1 teaspoon cinnamon
- 1/2 teaspoon nutmeg
- 3 cups rolled oats
- 6 ounces nestle semi-sweet chocolate chips
- 1/2 cup pecans, chopped
Recipe
- 1 pre-heat oven: 350 degrees f.
- 2 cream margarine with molassas and truvia until light and fluffy.
- 3 beat in egg and vanilla.
- 4 stir flour with baking soda, salt, nutmeg, cinnamon and add to creamed mixture - mix well.
- 5 add pureed tofu to mixture - mix well.
- 6 fold in oats, chips and nuts.
- 7 place rounded tablespoonfuls ungreased cookie sheets.
- 8 bake at 350 degrees for 9-10 minutes for soft and 11-12 minutes for firmer crisper cookies.
- 9 best if transferred to cooling rack.
