Low Fat Vegetable Spaghetti Sauce

Ingredients
- Servings: 8
- 3 cups button mushrooms, fresh and sliced
- 1 small onion, chopped
- 1 garlic clove, minced
- 2 tablespoons olive oil
- 8 ounces tomato sauce
- 8 ounces stewed tomatoes
- 1/2 cup dry red
- 1/4 cup parsley
- 1 teaspoon sugar
- 3/4 teaspoon dried basil
- 2 cups zucchini, diced
Recipe
- 1 cook mushrooms,garlic and onion in hot olive oil over medium heat for 5 minutes or until onions are tender.
- 2 stir in the tomato sauce,tomatoes,,parsley,sugar and herbs.
- 3 bring to a boil,then reduce heat and simmer,uncovered for 20-25 minutes or until sauce is slightly thickened.
- 4 stir in zucchini and continue to simmer for 5-10 minutes or until zucchini is tender.
- 5 serve over spaghetti.
