Low Fat Vegetable Spaghetti Sauce

Total Time: 1 hr Preparation Time: 20 mins Cook Time: 40 mins

Ingredients

  • Servings: 8
  • 3 cups button mushrooms, fresh and sliced
  • 1 small onion, chopped
  • 1 garlic clove, minced
  • 2 tablespoons olive oil
  • 8 ounces tomato sauce
  • 8 ounces stewed tomatoes
  • 1/2 cup dry red
  • 1/4 cup parsley
  • 1 teaspoon sugar
  • 3/4 teaspoon dried basil
  • 2 cups zucchini, diced

Recipe

  • 1 cook mushrooms,garlic and onion in hot olive oil over medium heat for 5 minutes or until onions are tender.
  • 2 stir in the tomato sauce,tomatoes,,parsley,sugar and herbs.
  • 3 bring to a boil,then reduce heat and simmer,uncovered for 20-25 minutes or until sauce is slightly thickened.
  • 4 stir in zucchini and continue to simmer for 5-10 minutes or until zucchini is tender.
  • 5 serve over spaghetti.
