Low Gi Layered Mediterranean Dip

Ingredients

  • Servings: 6
  • 1 cup hummus
  • 1 medium tomato, diced
  • 1 cucumber, diced
  • 2 ounces feta cheese, crumbled

Recipe

  • 1 spread hummus bottom of bowl.
  • 2 cover with layers of diced tomato, diced cucumbers (1/4 cup) and crumbled feta cheese.
  • 3 serve with stone ground or whole grain crackers or whole wheat pita bread.
