Low Cal Vegan Banana Muffins

Total Time: 35 mins Preparation Time: 10 mins Cook Time: 25 mins

Ingredients

  • 2 mashed bananas
  • 1 tablespoon unsweetened applesauce
  • 1 teaspoon vanilla
  • 1/2 cup sugar
  • 1 dash salt
  • 1 teaspoon baking powder
  • 1 tablespoon flax seed meal
  • 2 tablespoons water
  • 2 tablespoons rice milk
  • 1/2 cup whole wheat flour
  • 1/4 cup all-purpose flour

Recipe

  • 1 mix the flours, salt, and baking powder in a small bowl and set aside.
  • 2 mix the water and flax seed meal together in a small bowl and set that aside.
  • 3 in a larger bowl, mash the bananas.
  • 4 add the applesauce, vanilla, sugar, flax seed mixture, and milk. stir well.
  • 5 add the dry ingredients to the wet and mix, just until combined.
  • 6 divide batter into a muffin pan that has been sprayed with non-stick cooking spray.
  • 7 bake at 350 for about 25 minute.
