- 4 cups sweet potatoes, peeled and sliced 1/4-inch
- 3 tablespoons oil
- 1 teaspoon salt
- black pepper, to taste
Recipe
- 1 cover peeled sliced potatoes with cool water. refrigerate 20 minutes and drain.
- 2 heat oil in skillet.
- 3 add potatoes and saute, covered for 3 minutes over medium heat.
- 4 uncover, raise heat and fry 5 minutes or until brown and crisp on both sides.
