Quick Perogies Casserole

Total Time: 40 mins Preparation Time: 10 mins Cook Time: 30 mins

Ingredients

  • Servings: 4
  • 1 (16 ounce) package frozen pierogies
  • 3 tablespoons oil
  • 2 large onions, sliced thinly
  • 1 cup sliced mushrooms
  • 1 (14 ounce) can tomatoes, diced
  • 1 tablespoon chopped parsley
  • 3/4 teaspoon salt
  • 1/4 teaspoon pepper
  • 1 cup water

Recipe

  • 1 prepare perogies as per package directions for boiled perogies.
  • 2 drain.
  • 3 in a large skillet, heat oil.
  • 4 add onions and mushrooms.
  • 5 cook until soft and golden.
  • 6 add remaining ingredients and bring to a boil.
  • 7 cook for 5 minutes.
  • 8 preheat oven to 350°f.
  • 9 in a shallow 2 qt casserole dish arrange perogies and cover with onion mixture.
  • 10 bake covered 30 minutes.
