Sweet Potato Latkes With Maple Sauce

Total Time: 40 mins Preparation Time: 20 mins Cook Time: 20 mins

Ingredients

  • Servings: 4
  • 1 lb sweet potato
  • 2 eggs, beaten
  • 1/2 teaspoon baking powder
  • 1/4 cup matzo meal
  • 1/2 teaspoon salt
  • pepper
  • 2 -4 tablespoons olive oil (for frying)
  • 1 cup real maple syrup
  • 1/2 teaspoon grated gingerroot
  • 1/4 teaspoon nutmeg
  • 1 pinch clove
  • 1 pinch salt
  • 1 pinch pepper
  • chopped mint leaf, for garnish

Recipe

  • 1 peel potatoes and shred in food processor.
  • 2 put in a colander or strainer and squeeze to get rid of excess moisture.
  • 3 add beaten eggs to a bowl, add sweet potatoes.
  • 4 mix in baking powder, matzoh meal, salt, pepper.
  • 5 heat sauce in the meantime--.
  • 6 mix all sauce ingredients in a small pan over low heat, and keep warm.
  • 7 heat 2 tbsp oil in a skillet and add small ladlefuls of sweet potato batter.
  • 8 cook for 3-4 minutes per side.
  • 9 remove to paper towels to drain oil.
  • 10 add additional oil to skillet, fry latkes and drain on paper towels.
  • 11 place the sauce on plates, add latkes and garnish with mint.
