Easy Chilie Rellenos

Total Time: 50 mins Preparation Time: 10 mins Cook Time: 40 mins

Ingredients

  • Servings: 4
  • 2 (4 1/2 ounce) cans chopped green chilies, undrained
  • 1 lb monterey jack cheese, shredded
  • 1 (2 1/4 ounce) can sliced ripe olives
  • 4 large eggs, lightly beaten
  • 1/2 cup milk
  • 1/2 teaspoon dry mustard
  • 1/4 teaspoon salt

Recipe

  • 1 preheat oven to 325 degrees.
  • 2 layer one-third each of green chilies, cheese, and olives in a greased 11x7-inch baking dish.
  • 3 repeat layers twice.
  • 4 combine eggs and remaining 3 ingredients in a medium bowl; pour over cheese mixture.
  • 5 bake, uncovered, for 35 minutes.
  • 6 remove from oven, and let stand 5 minutes before serving.
