Ingredients

- 2 lbs fresh beets, washed and trimmed
- 1/2 lb shallot, peeled
- 1 tablespoon vinegar
- 1 tablespoon olive oil
- 1/2 teaspoon salt
- 1/2 teaspoon pepper
Recipe
- 1 preheat oven to 400°f place beets and shallots on a large sheet of aluminum foil and fold the edges together to seal. bake for 1 hour or until beets are tender. remove from oven and cool.
- 2 combine remaining ingredients and set aside,.
- 3 remove skins from beets, cut into chunks, and drizzle with vinegar mixture. toss well and serve.
