Roasted Beets

Total Time: 1 hr Cook Time: 1 hr

Ingredients

  • Servings: 6
  • 2 lbs fresh beets, washed and trimmed
  • 1/2 lb shallot, peeled
  • 1 tablespoon vinegar
  • 1 tablespoon olive oil
  • 1/2 teaspoon salt
  • 1/2 teaspoon pepper

Recipe

  • 1 preheat oven to 400°f place beets and shallots on a large sheet of aluminum foil and fold the edges together to seal. bake for 1 hour or until beets are tender. remove from oven and cool.
  • 2 combine remaining ingredients and set aside,.
  • 3 remove skins from beets, cut into chunks, and drizzle with vinegar mixture. toss well and serve.
