Ingredients
- Servings: 14
- 1 1/3 cups flour
- 1/4 cup ground walnuts
- 8 tablespoons butter, at room temperature
- 5 egg yolks, divided
- 1/3 cup milk, plus 1 tablespoon
- 3 ounces gruyere cheese, coarsely grated
- 1 tablespoon cornstarch
- 3 tablespoons light cream
- salt
- 1/3 cup heavy cream
Recipe
- 1 preheat oven to 350°f.
- 2 mix flour and walnuts.
- 3 add butter and 2 egg yolks.
- 4 mix with your hands until it becomes a smooth dough.
- 5 divide into 14-18 pieces.
- 6 lightly flour your fingers and press each piece of dough over the bottom and sides of a 2"-2 1/2" fluted tart tin.
- 7 prick surface of dough with a fork.
- 8 bake for 15-20 minutes, or until golden.
- 9 let cool in tins a few minutes, then remove very carefully.
- 10 place milk and cheese in a sauce pan and heat until cheese melts and mixture comes to a boil, stirring constantly.
- 11 combine remaining egg yolks with cornstarch and light cream.
- 12 gradually add to cheese mixture and heat to just under the boiling point.
- 13 add salt, cool, and chill.
- 14 whip heavy cream until stiff peaks form.
- 15 fold into the cheese mixture.
- 16 pipe or spoon mixture into tart shells.
- 17 refrigerate until ready to serve.
