Swissair Tarts

Ingredients

  • Servings: 14
  • 1 1/3 cups flour
  • 1/4 cup ground walnuts
  • 8 tablespoons butter, at room temperature
  • 5 egg yolks, divided
  • 1/3 cup milk, plus 1 tablespoon
  • 3 ounces gruyere cheese, coarsely grated
  • 1 tablespoon cornstarch
  • 3 tablespoons light cream
  • salt
  • 1/3 cup heavy cream

Recipe

  • 1 preheat oven to 350°f.
  • 2 mix flour and walnuts.
  • 3 add butter and 2 egg yolks.
  • 4 mix with your hands until it becomes a smooth dough.
  • 5 divide into 14-18 pieces.
  • 6 lightly flour your fingers and press each piece of dough over the bottom and sides of a 2"-2 1/2" fluted tart tin.
  • 7 prick surface of dough with a fork.
  • 8 bake for 15-20 minutes, or until golden.
  • 9 let cool in tins a few minutes, then remove very carefully.
  • 10 place milk and cheese in a sauce pan and heat until cheese melts and mixture comes to a boil, stirring constantly.
  • 11 combine remaining egg yolks with cornstarch and light cream.
  • 12 gradually add to cheese mixture and heat to just under the boiling point.
  • 13 add salt, cool, and chill.
  • 14 whip heavy cream until stiff peaks form.
  • 15 fold into the cheese mixture.
  • 16 pipe or spoon mixture into tart shells.
  • 17 refrigerate until ready to serve.
