Tomato Salsa

Total Time: 1 hr Preparation Time: 20 mins Cook Time: 40 mins

Ingredients

  • 16 cups tomatoes, slightly mashed
  • 2 cups onions, chopped
  • 2 cups green peppers, chopped
  • 1 jar jalapeno peppers or 6 -8 jalapeno peppers, chopped
  • 6 cloves garlic
  • 3/4 cup vinegar
  • 1 tablespoon pepper
  • 3 tablespoons canning salt
  • 3 tablespoons sugar
  • 1 (12 ounce) can tomato paste
  • 1 dash cumin
  • 1 dash marjoram
  • 1 tablespoon alum

Recipe

  • 1 take skins off tomatoes (put them in boiling water and then in cold water, skins will come off very easily) pour everything in a big cooking pot.
  • 2 mix well.
  • 3 simmer for 5 minutes.
  • 4 pour in pint jars.
  • 5 put on two piece canning lids.
  • 6 process in hot water bath for 30 minutes.
