Stephanie Russo's Morning Glory Bread

Ingredients



  • Servings: 8

  • 1 cup pecans, toasted and chopped

  • 3 cups all-purpose flour

  • 1 teaspoon salt

  • 1 teaspoon baking soda

  • 1 teaspoon cinnamon

  • 1/2 teaspoon nutmeg

  • 1 1/2 cups sugar

  • 3/4 cup applesauce

  • 3 large eggs

  • 2 teaspoons vanilla

  • 1 cup chopped pineapple

  • 1 cup carrot, finely grated

  • 1 cup raisins


Recipe



  • 1 preheat oven to 350 degrees.

  • 2 combine flour, salt, baking soda, cinnamon, and nutmeg.

  • 3 in another bowl, mix together sugar, applesauce, eggs, and vanilla.

  • 4 fold the carrots and pineapple into the applesauce mixture.

  • 5 toss the pecans and raisins in the dry ingredients and then combine both mixtures and stir just until all ingredients are moistened.

  • 6 pour batter into 2-8x4" loaf pans and bake 55-60 minutes.
