Sweet Potato Hash

Ingredients
- 2 large sweet potatoes, peeled and shredded
- 1 onion, chopped
- 1 -2 red bell pepper, chopped
- 3 slices bacon, diced
- 2 tablespoons wine or 2 tablespoons chicken broth
- 1 teaspoon salt
- 1 -2 teaspoon tony chachere's seasoning (or to taste)
Recipe
- 1 in a large skillet, fry bacon pieces over med-high heat until browned.
- 2 add onion and peppers to skillet and saute until onions are golden to slightly browned.
- 3 add wine or broth to pan to deglaze. add sweet potatoes. stir to combine. cover and cook over medium heat until sweet potatoes are softened.
- 4 season with salt and cajun seasoning.
- 5 serve warm.
