Sweet Potato Hash

Total Time: 35 mins Preparation Time: 15 mins Cook Time: 20 mins

Ingredients

  • 2 large sweet potatoes, peeled and shredded
  • 1 onion, chopped
  • 1 -2 red bell pepper, chopped
  • 3 slices bacon, diced
  • 2 tablespoons wine or 2 tablespoons chicken broth
  • 1 teaspoon salt
  • 1 -2 teaspoon tony chachere's seasoning (or to taste)

Recipe

  • 1 in a large skillet, fry bacon pieces over med-high heat until browned.
  • 2 add onion and peppers to skillet and saute until onions are golden to slightly browned.
  • 3 add wine or broth to pan to deglaze. add sweet potatoes. stir to combine. cover and cook over medium heat until sweet potatoes are softened.
  • 4 season with salt and cajun seasoning.
  • 5 serve warm.
