Swiss Cheese & Spinach Quiche

Total Time: 1 hr Preparation Time: 25 mins Cook Time: 35 mins

Ingredients

  • pastry dough, for one single crust pie (store bought or homemade)
  • 4 slices bacon, diced
  • 1/4 cup chopped onion
  • 1/4 cup chopped sweet red pepper
  • 1 (10 ounce) package frozen chopped spinach, thawed and squeezed dry
  • 4 eggs (or 2 cups egg substitute)
  • 1/2 cup cottage cheese
  • 1/4 cup shredded swiss cheese
  • 1/2 teaspoon dried oregano
  • 1/4 teaspoon dried parsley flakes
  • 1/4 teaspoon salt
  • 1/4 teaspoon pepper, and
  • 1/4 teaspoon paprika
  • 6 tablespoons sour cream

Recipe

  • 1 on a lightly floured surface, unroll pastry and transfer to a 9-inch pie plate.
  • 2 trim pastry to 1/2 inch beyond the edge of the plate and flute edges.
  • 3 line unpricked pastry with a double thickness of heavy duty aluminum foil.
  • 4 bake at 450 for 8 minutes, remove foil and bake for another 5 minutes.
  • 5 cool on a wire rack and reduce the oven to 350.
  • 6 in a small skillet cook the bacon, onions and red pepper until the veggies are tender and drain.
  • 7 stir in the spinach.
  • 8 spoon spinach mixture into pastry.
  • 9 in a small bowl, combine the eggs, cottage cheese, swiss cheese and seasonings.
  • 10 pour over spinach mixture.
  • 11 bake for 35 - 40 minutes or until a knife inserted near center comes out clean.
  • 12 let rest for 10 minutes before cutting.
  • 13 serve with sour cream.
